Baby Pac Choi





A smaller, more tender version of Pac Choi.  Also known as Chinese Celery, it is excellent eaten raw, steamed, or lightly stir fried. 

Storage and Preparation
Store unwashed in a plastic bag in your crisper.  If not covered in plastic the greens will wilt.  All of the baby pac choi is edible and excellent for eating, only the small stem at the bottom should be removed.  Be sure not to over cook the Pac choi.  It should be crunchy when eating. 

Baby Pac Choi in Fish Soup 
Simply saute half an onion (chopped), 2 cloves of garlic (chopped), Baby
Pac Choi (chopped) , 1 pound white fish (whole), tamari (to taste), toasted sesame oil ( 1 tablspoon) and water (add water until the desired consistency is reached). 
Let simmer for 20 minutes.  When it is all cooked and blended add 1 tablespoon of miso to the broth and serve.  This would be great served with rice or soba noodles. The key to crunchy Baby Pac Choi is not to cook it too long.  Enjoy.

  • Sliced raw in salads.
  • Raw topped with peanut butter and raisins.
  • Simply sautéed with garlic in peanut or sesame oil.
  • Coleslaw in place of cabbage.
  • Kimchi.
  • Green smoothies.
  • Try baby pac choi instead of celery in your stuffing for a fun twist. Baby Pac choi is also known as chinese celery and can be used in place of celery in almost any dish.
  • Roasted Baby Pac Choi- I sliced a larger pac choi in half lengthwise and placed this in the roasting pan with halibut drizzled with olive oil, salt and pepper. Roasted them for about 25 minutes.
