Arugula



Arugula is a delicate green with an intense sharpness and bite, which complements any salad.  Arugula is great when  used as a bed for a hot steaming dish such as fish.  Used in this way arugula wilts and its aroma fills the plate.

Storage and Preparation: 
The arugula must be washed before eating.  Arugula should be stored in the bag in which it is purchased at about 35 – 40 degrees or the crisper drawer in your refrigerator.  Arugula should last for at least one week in the refrigerator.

Fresh Arugula
Garden Peach tomatoes raw sliced thin
Freshly shaved Parmesan.
Layered in this order this is our favorite taste combination.  We make a meal of this.

Arugula Pesto Recipe
In a food processor or blender combine: 1 8oz bag arugula, 1 cup raw almonds, 8 oz goat cheese, I bunch garlic scapes, 1 cup olive oil, 1 tspn salt, 1 tspn cumin, & 6 fresh sage leaves.
